Twilight Barmbrack
Introduction to Twilight Barmbrack
Originating from the rich culinary history of Ireland, Barmbrack is a traditional sweet bread that holds a special place in the heart of Celtic celebrations, especially during Halloween, also known as Samhain. The word "Barmbrack" is derived from the Irish term "báirín breac," which translates to "speckled loaf." This reflects its fruit-studded nature. Integrating mystical customs with the delightful burst of flavors, Twilight Barmbrack is much more than a mere treat. It's a journey into the past, where each slice could hold your fortune, thanks to the trinkets traditionally baked into the loaf.
Ingredients
- Raisins - 150g
- Sultanas - 150g
- Currants - 100g
- Cake Flour - 250g
- Baking Powder - 1 teaspoon
- Ground Cinnamon - 1 teaspoon
- Brown Sugar - 125g
- Strong Brewed Tea (cold) - 250ml
- Egg - 1 large
- Butter (melted) - 50g
- Mixed Spice - 1 teaspoon
- Lemon Zest - 1 whole
- Salt - a pinch
- Baking Soda - 1/2 teaspoon
Preparation
Begin your twilight journey by soaking the raisins, sultanas, and currants in the tea overnight. This allows the dried fruits to plump up, absorbing the rich tea flavors, resulting in a moist, dense texture for your barmbrack.
Cooking Process
- Preheat your oven to 170°C (340°F) and generously grease a 20cm round cake tin with butter.
- In a large bowl, whisk together the flour, baking powder, cinnamon, mixed spice, sugar, and salt.
- Drain the soaked fruits and add them to the dry mixture along with the lemon zest.
- In another bowl, beat the egg and mix in the melted butter. Gently stir this wet mixture into the dry ingredients until just combined.
- Add in the soaked fruits and mix through. The mixture should have a thick, wet consistency.
- Poure the batter into the prepared cake tin, smoothing it out with a spatula.
- Bake for approximately 1 hour, or until a skewer inserted into the center comes out clean. Keep track with a cooking timer for perfect results.
- Once baked, leave it to cool in the tin for 10 minutes, then transfer the loaf to a wire rack to cool completely.
