Ingredients for Umngqusho Cubes
- Samp – 2 cups
- Speckled beans – 1 cup
- Chopped onion – 1 large
- Minced garlic – 2 cloves
- Vegetable oil – 2 tablespoons
- Water – 6 cups
- Salt – 2 teaspoons
- Black pepper – 1 teaspoon
- Vegetable bouillon cube – 1
- Turmeric – 1 teaspoon
- Paprika – 1 teaspoon
Preparation Steps
- Soak the samp and beans overnight in a large bowl covered with water. This helps to soften and hydrate them for cooking.
- After soaking, drain the samp and beans and set them aside.
Cooking Process
Step 1: Cook the Base
- Heat vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
- Add the samp and beans to the pot and stir.
- Pour in 6 cups of water, making sure everything is submerged.
- Stir in the salt, black pepper, vegetable bouillon cube, turmeric, and paprika.
- Bring the mixture to a boil.
- Once boiling, reduce the heat to low and cover to simmer for about 2 hours, or until the samp and beans are tender. Remember to stir occasionally and add additional water if needed to maintain a porridge-like consistency.
Step 2: Forming the Cubes
- Once cooked, remove the pot from heat and allow the mixture to cool slightly.
- Line a baking tray with parchment paper.
- Scoop the cooked Umngqusho onto the tray and spread it evenly to form a thick layer.
- Chill in the refrigerator for at least 1 hour, or until the mixture is solidified.
Step 3: Baking the Cubes
- Preheat your oven to 200°C (392°F).
- Once the Umngqusho has set, cut it into cubes.
- Place the cubes onto a baking sheet lined with parchment.
- Bake the cubes for approximately 15-20 minutes, or until they are golden brown and crispy on the outside.
