Traditionally, this cake is a layered confection comprised of thin pastry sheets stacked with rich fillings. Preparing the Pastry Sheets

  1. Combine the flour, butter, and a pinch of salt in a large mixing bowl. Use your fingers to rub the ingredients together until they resemble breadcrumbs.
  2. Add the eggs one by one into the mix, kneading the dough until it reaches a smooth consistency. Wrap it in cling film and let it rest in the refrigerator for about an hour.

Preparing the Fillings

  1. For the chocolate filling, melt the dark chocolate with 150ml of the heavy cream in a bowl over simmering water. Stir until smooth and set aside to cool.
  2. Beat the cream cheese with 50g of powdered sugar and vanilla extract until smooth. Set aside.

Assembling the Volga Layers

  1. Preheat your oven to 180°C (356°F).
  2. Retrieve the dough from the refrigerator, divide it into equal parts, and roll each into thin layers, about 0.5cm thick.
  3. Bake each pastry sheet for 8-10 minutes until golden brown. Let them cool completely before layering.
  4. Lay down your first baked sheet, and spread a layer of the chocolate filling evenly across it. Add another sheet and apply a layer of the cream cheese mixture. Repeat this process until all sheets and fillings are layered.

Complete Cooking Process

After you've assembled your Volga Layers, cover it with the remaining heavy cream mixed with the rest of the powdered sugar as a frosting. Before spraying, garnishing the top with chopped walnuts and a light dusting of cocoa powder.

Cooling and Setting

  1. Allow your assembled cake to set in the refrigerator for at least four hours, but ideally overnight, to ensure the layers hold together properly.
  2. After the setting period, bring the cake out and let it sit at room temperature for about 30 minutes before slicing. This balances the flavors and makes the cake easier to cut.
