Westphalian Cherry Frost is a traditional dessert that hails from the Westphalia region in Germany. Known for its rich flavors and luscious texture, this dessert combines the natural sweetness of cherries with the creamy smoothness of whipped cream. Originating in a region known for its cherry orchards and dairy products, Westphalian Cherry Frost has become a beloved treat especially enjoyed during festive occasions and family gatherings. This dessert carries the unique hallmark of combining regional fruits with artisanal culinary techniques that have been passed down through generations.
Ingredients
- 400g of fresh cherries
- 150g of sugar
- 2 tablespoons of lemon juice
- 250ml of whipping cream
- 3 sheets of gelatin
- 50ml of water
- 1 teaspoon of vanilla extract
- 50g of sliced almonds (optional for garnish)
- Chocolate shavings (optional for garnish)
Preparation
Start by washing and pitting the cherries. Save a few whole cherries for garnish if desired.
In a saucepan, combine the cherries, sugar, and lemon juice. Cook on medium heat until the cherries release their juices and the mixture starts to thicken.
Soak the gelatin sheets in cold water for about 5 minutes. Once softened, add them to the warm cherry mixture. Stir until completely dissolved.
Allow the mixture to cool to room temperature.
In a separate bowl, whip the whipping cream until soft peaks form. Gradually fold in the cooled cherry mixture along with the vanilla extract.
Cooking Process
Transfer the cherry cream mixture into a decorative mold or bowl. Chill in the refrigerator for at least 4 hours, or until set. If you're new to chilling desserts, consider setting a cooking timer to remind yourself of the chilling time.
