Würziger Speckkuchen
The Würziger Speckkuchen, a savory bacon cake, is a traditional German dish that dates back to the medieval period. Originating from the Saxony region, this hearty dish was created to make use of preserved ingredients like speck and onions during the colder months. Over the centuries, it has maintained its popularity due to its rich flavor and satisfying nature.
Ingredients
- Flour - 500g
- Milk - 250ml
- Eggs - 3
- Butter - 100g
- Yeast - 20g
- Salt - a pinch
- Sugar - a teaspoon
- Speck - 250g
- Onions - 200g
- Sour Cream - 200g
- Caraway Seeds - 1 teaspoon
- Black Pepper - to taste
Preparation
- Begin by preparing the dough. Warm the milk slightly and dissolve the yeast and sugar in it. Allow it to sit for about 10 minutes until frothy.
- In a large bowl, mix the flour with a pinch of salt. Create a well in the center and pour in the milk and yeast mixture along with melted butter and eggs.
- Knead the mixture into a smooth dough, cover it with a damp cloth, and let it rise in a warm place for about an hour or until it doubles in size.
- While the dough is rising, slice the speck into small strips and dice the onions.
- In a pan, sauté the speck until it releases its fat. Add the onions to the pan and fry them until they are translucent and fragrant.
- Preheat your oven to 200°C (392°F). Roll out the dough to fit a baking tray or a 28cm round springform pan.
- Mix the fried speck and onions mixture with sour cream, caraway seeds, and black pepper to taste.
- Spread the mixture evenly over the dough.
Cooking Process
- Place the baking tray or springform pan into the preheated oven.
- Bake the Würziger Speckkuchen for approximately 30-35 minutes or until the edges are golden brown and the topping is bubbling slightly.
- Check the cooking time to ensure it doesn't overcook.
