Yemeni Sabaya is a traditional pastry dish with a rich cultural heritage. Known for its flaky layers and distinctive sweetness, Sabaya is often a centerpiece in Yemeni celebrations and gatherings. - Black seeds - 1 tablespoon (optional)
- Cardamom powder - 1 teaspoon (optional)
Preparation Method of Yemeni Sabaya
Step 1: Preparing the Dough
Begin by mixing the flour, yeast, sugar, and salt in a large bowl. Gradually add water while kneading the mixture until you obtain a soft and pliable dough. This process might take about 10 to 15 minutes.
Once the dough is ready, cover it with a damp cloth and allow it to rest for about an hour in a warm place until it doubles in size.
Step 2: Shaping the Sabaya
After the dough has risen, divide it into equal portions. Roll each portion into a thin sheet using a rolling pin. Carefully spread a thin layer of butter on the surface of each rolled sheet.
Layer the sheets on top of each other, creating 5-6 layers. Brush each layer with ghee for added richness.
Step 3: Folding and Layering
Fold the layered sheets into a square or rectangle shape, ensuring each fold is brushed with ghee. This folding technique helps achieve the renowned flaky texture of the Sabaya.
Step 4: Baking the Sabaya
Preheat the oven to 350°F (175°C). Place the folded Sabaya on a baking tray and bake for about 20-30 minutes until golden brown. Use a cooking timer for accuracy.
Step 5: Final Touches
Upon removing from the oven, immediately drizzle honey over the hot Sabaya. This will give it a subtle sweetness and a shiny finish. Sprinkle black seeds and cardamom powder if desired, to enhance flavor.
