Step 1: Preparing the Filling

In a bowl, combine walnuts, pistachios, cinnamon, and a pinch of saffron. Mix well and set aside.

Step 2: Layering the Phyllo Pastry

Preheat your oven to 180Β°C (350Β°F). Brush the bottom of a baking dish with butter. Lay a sheet of phyllo pastry in the dish, brush with butter, and repeat this process for 10 layers.

Step 3: Adding the Nut Mixture

Spread a quarter of the nut mixture over the layered phyllo pastry. Add 5 more layers of phyllo, each brushed with butter. Repeat the layering and filling process, finishing with 10 layers on top.

Cooking Process

Step 4: Baking

Cut the assembled baklava into diamond shapes, making sure the knife cuts through all layers. Bake in the preheated oven for about 45 minutes to 1 hour until golden brown and crisp.

Step 5: Preparing the Syrup

While the baklava bakes, prepare the syrup. In a saucepan, combine honey, sugar, water, and another pinch of saffron. Heat to a simmer over medium heat, stirring occasionally.

Add orange blossom water and lemon juice. Simmer for 10 minutes, then remove from the heat and let it cool.

Step 6: Combining Syrup and Baklava

Once the baklava is baked, immediately pour the cooled syrup evenly over the hot baklava. Sprinkle with zabib and allow it to soak for a minimum of 4 hours or overnight for best results.
