Step 1: Preparing the Zobo Extract

After simmering, remove the pot from heat and strain the liquid through a fine mesh sieve into a separate bowl, discarding the solids. This strained liquid is your concentrated Zobo extract.

Step 2: Sweetening and Adjusting Flavors

Add sugar to the warm Zobo extract and stir until it dissolves completely. Adjust the sweetness to your preference. Stir in the freshly squeezed lime juice for a subtle tanginess that complements the floral notes of the hibiscus.

Step 3: Preparing the Gelatin Mixture

In a small bowl, mix the gelatin powder with 1/2 cup of cold water. Allow it to bloom for about 5 minutes. If using agar-agar, follow the package instructions for blooming times and necessary adjustments.

Meanwhile, dissolve cornstarch in 1/4 cup of cold water to create a slurry. This will help in binding and firming up the Zobo mixture.

Step 4: Combining and Cooking the Ingredients

In a cleaned pot, pour the Zobo extract sweetened with sugar and lime juice. Gently heat the mixture on low to medium heat. Gradually add the bloomed gelatin, stirring continuously until fully dissolved.
