Introduction to Älplermagronen

Älplermagronen is a traditional Swiss dish that combines key ingredients like macaroni, cheese, potatoes, and cream into a hearty and comforting meal. It has roots in the Swiss Alps, where it was crafted by Alpine herdsmen needing a nutritious and filling dish during the cold months. Over time, this dish has become a beloved staple in Swiss cuisine, showcasing the rich flavors and robust ingredients found locally.

Ingredients

• Macaroni - 300g
• Potatoes - 400g, peeled and cubed
• Cheese (Gruyère or Emmental) - 150g, grated
• Cream - 200ml
• Milk - 200ml
• Onion - 1 large, thinly sliced
• Butter - 50g
• Salt and pepper, to taste
• Nutmeg, a pinch
• Apples - 3, peeled and sliced for apple sauce
• Sugar - 2 tablespoons
• Cinnamon - a pinch
• Bacon - 100g, optional

Preparation

Before you begin cooking, ensure all your ingredients are prepared and ready. This includes grating the cheese, peeling and cubing the potatoes, and slicing the onion and apples. If you are using bacon, you can chop it into small pieces.

Apple Sauce

Prepare the apple sauce first. Combine the sliced apples with sugar and a pinch of cinnamon in a saucepan. Cook over medium heat until the apples are soft and break down into a sauce, about 10-15 minutes. Set aside to serve with the Älplermagronen.

Cooking Process

Step 1: Boil the Macaroni and Potatoes

In a large pot of salted water, cook the macaroni until al dente, according to package instructions. About 5 minutes before the pasta is done, add the cubed potatoes to the pot. Once both are cooked, drain well and return to the pot.

Step 2: Prepare the Onion Mixture

While the macaroni and potatoes are cooking, melt butter in a skillet over medium heat. Add the sliced onion and cook until golden brown and caramelized. If using bacon, add it to the skillet and cook until crisp. Set aside.

Step 3: Combine and Bake

Preheat your oven to 180°C (350°F). In the pot with macaroni and potatoes, stir in the caramelized onion mixture, milk, cream, grated cheese, salt, pepper, and a pinch of nutmeg. Mix well to combine. Transfer to a baking dish and bake for 20-25 minutes or until the top is golden and bubbly.

Once out of the oven, let the Älplermagronen cool for a few minutes before serving. Traditionally, it is served with a generous helping of apple sauce on the side, which provides a sweet contrast to the savory flavors. This dish is perfect for cold days, offering warmth, comfort, and satisfaction.
