Arctic Veil
Introduction to the Arctic Veil
The Arctic Veil is a sophisticated dish that captures the essence of the northern landscapes. Known for its delicate yet robust flavors, this dish combines the unique taste of cold-water fish with a fusion of spices and a frosty presentation that is reminiscent of the Arctic itself. This dish is believed to have originated in regions close to the Arctic Circle, where indigenous practices of curing and preserving fish are central to culinary traditions. Over time, the recipe evolved to include contemporary flavors while still paying homage to its roots.
Ingredients
- Salmon Fillets - 2 pieces (approximately 6 oz each)
- Lemon - 1, juiced
- Fresh Dill - 2 tablespoons, chopped
- Olive Oil - 2 tablespoons
- Honey - 1 tablespoon
- Garlic - 2 cloves, minced
- Sea Salt - to taste
- Black Pepper - to taste
- Rice Vinegar - 1 tablespoon
- White Wine - 1 cup
- Shallots - 2, finely chopped
- Wild Rice - 1 cup, cooked
- Baby Spinach - 2 cups
- Butter - 2 tablespoons
- Crème Fraîche - 2 tablespoons
- Smoked Paprika - 1 teaspoon
Preparation
Begin by prepping the salmon fillets. Rinse them under cold water and pat dry with paper towels. Place the fillets in a shallow dish, and drizzle with lemon juice. Sprinkle freshly chopped dill over the fish, ensuring even coverage. In a small mixing bowl, whisk together olive oil, honey, and minced garlic. Pour this marinade over the salmon, cover the dish, and let it marinate in the refrigerator for at least 30 minutes.
Cooking Process
- Preheat your oven to 375°F (190°C). While the oven is heating, prepare a baking sheet by lining it with aluminum foil for easier cleanup.
- Once the salmon fillets have marinated, place them on the prepared baking sheet. Sprinkle with sea salt and black pepper to your liking.
- Spray or drizzle a bit more olive oil over the top of each filet, then transfer them to the oven.
- Bake for about 15-20 minutes, depending on the thickness of your fish. The fish should be cooked through but still juicy inside. Verify with a fork if it flakes easily, you will find it is done.
- In the meantime, heat a small saucepan over medium heat. Add butter and once it has melted, add shallots. Sauté until they become translucent.
- Pour in white wine and rice vinegar and allow them to reduce by half.
- Stir in crème fraîche and smoked paprika. Simmer gently while stirring until a smooth sauce forms. Season with sea salt and black pepper.
- To serve, spoon a bed of wild rice on each plate, scatter baby spinach over the rice. Top with a salmon filet and drizzle with the prepared sauce. Optionally, garnish with additional dill.
