Aromatic Ganjang Guk
Ganjang Guk is a deeply aromatic and savory Korean soup that showcases the rich umami flavor of soy sauce within a hearty broth. Preparation
Before diving into the cooking process, gather all the necessary ingredients. Tofu should be pressed to remove excess moisture and cut into cubes. Slice the onion, chop the garlic, and slice the shiitake mushrooms. Thinly slice the zucchini, and prepare the green onions for garnish. Cut the beef into bite-sized pieces.
Cooking Process
Making the Base Broth
In a large pot, heat a tablespoon of sesame oil over medium heat. Add the beef and sauté until it browns evenly, releasing its juices into the oil.
Once the beef is browned, add the sliced onion and garlic, stirring lightly. Let them soften and become fragrant, which should take about 3 minutes.
Incorporating Soy Sauce and Additional Ingredients
Pour in the soy sauce into the pot, mixing it thoroughly with the beef and vegetables. Let the mixture cook for another 2 minutes to let the aroma of the soy blend with the sautéing base.
Add the shiitake mushrooms and zucchini slices to the pot. Stir them with the mixture and allow them to integrate and become tender over a few minutes of cooking.
Simmering the Soup
Add roughly six cups of water to the pot. Bring it to a boil and then reduce the heat to let it simmer. At this stage, adjust the seasoning by adding a pinch of salt and freshly ground pepper.
Allow the mixture to simmer for around 30 minutes. It's best to set a cooking timer to ensure precise cooking.
Adding Final Touches
After the soup has simmered, gently add the cubed tofu and stir carefully so that it doesn’t break apart. Let it cook for another 5 minutes to absorb the flavors of the broth.
Remove the pot from the heat and garnish the soup with freshly sliced green onions right before serving.
