Introduction to Aurora Isles Cuisine

The Aurora Isles, a cluster of enchanting islands tucked away in the northern seas, is renowned for its vibrant culture and rich culinary traditions. The cuisine of these islands reflects their unique geographical location and the harmonious blend of indigenous and colonial influences. The Aurora Isles' recipes have been passed down through generations, incorporating a variety of spices, and fresh seafood, combining earthy flavors with aromatic herbs.

The Atlantic breeze, coupled with sprawling markets where local fishermen display their catch of the day, sets the stage for a culinary adventure. Today, we dive into one of their celebrated dishes: Aurora Isles Seafood Medley Pasta.

Ingredients

  1. Pasta - 400g
  2. Shrimp - 200g, peeled and deveined
  3. Scallops - 150g
  4. Squid - 100g, cleaned and sliced
  5. Cherry Tomatoes - 100g, halved
  6. Fresh Basil - A handful, chopped
  7. Fresh Parsley - A handful, chopped
  8. Olive Oil - 3 tablespoons
  9. Garlic - 4 cloves, minced
  10. Lemon - 1, zested and juiced
  11. Sea Salt - to taste
  12. Black Pepper - to taste
  13. White Wine - 100ml
  14. Parmesan Cheese - for garnishing

Preparation

Step 1: Preparing the Seafood

Ensure that the shrimp, scallops, and squid are fresh and clean. Peel and devein the shrimp, slice the squid into rings, and pat the scallops dry. Season them lightly with sea salt and black pepper.

Step 2: Cooking the Pasta

Fill a large pot with water and bring it to a boil. Add a generous pinch of sea salt and cook the chosen pasta according to the package instructions until al dente. Drain the pasta and set aside, drizzling a little olive oil to prevent sticking.

Cooking Process

Step 3: Sautéing the Seafood

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp, scallops, and squid to the skillet. Cook for about 2-3 minutes until the shrimp turns pink and the scallops and squid are opaque. Remove them from the skillet and set aside temporarily.

Step 4: Making the Sauce

In the same skillet, add the white wine and scrape any browned bits from the bottom of the pan. Let the wine reduce by half. Add the cherry tomatoes and cook until they start to soften. Stir in the lemon zest and juice, and season with sea salt and black pepper to taste.

Step 5: Bringing It All Together

Return the cooked seafood to the skillet and toss to combine with the sauce. Add the cooked pasta and gently mix everything together. Sprinkle the chopped basil and parsley on top, mixing once again to combine the flavors.

Cooking Time

The entire cooking and preparation process should take approximately 30-40 minutes, check your cooking timer to ensure perfect timing.
