Avarekalu Saaru
Avarekalu Saaru, a traditional South Indian delicacy, hails from the beloved Karnataka region of India. Renowned for its rich flavors and comforting qualities, this dish features avarekalu or hyacinth beans, which are abundant during the winter months. Historically, avarekalu has been a staple in Karnataka cuisine, often celebrated in local fairs and festivals. This flavorful dish is a part of a typical Udupi meal, enjoyed by generations for its nourishing and warming qualities.
Ingredients
- 1 cup Avarekalu (hyacinth beans)
- 1 medium onion, finely chopped
- 2 medium tomatoes, chopped
- 2 tablespoons coconut oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida
- 2 dried red chillies
- 10 to 12 fresh curry leaves
- 1/2 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon sambar powder
- Salt to taste
- 2 cups of water
- 1/2 cup coconut, grated
- 2 tablespoons coriander leaves, chopped
Preparation
Step 1: Preparing the Avarekalu
Start by rinsing the avarekalu thoroughly under running water to remove any dirt. Once clean, soak them in water for about 4 to 5 hours or overnight if possible. This helps in softening the beans, making them easier to cook and digest.
Step 2: Making the Coconut Masala
In a blender, add the freshly grated coconut, and a little water to blend into a smooth paste. This paste will add a creamy texture and depth of flavor to the Saaru.
Cooking Process
Step 1: Sautéing the Base
Heat coconut oil in a large saucepan over medium heat. Add the mustard seeds and let them splutter. Next, add the cumin seeds, asafoetida, and dried red chillies. Sauté until the spices release their aroma.
Following this, add the chopped onion and cook until they soften and turn golden brown. Add the chopped tomatoes and curry leaves. Stir in the turmeric powder, coriander powder, and sambar powder. Cook until the tomatoes become mushy and the spices blend well.
Step 2: Cooking the Avarekalu
Add the soaked avarekalu to the pan, stirring well to coat them with the spice mixture. Pour in 2 cups of water and bring the mixture to a gentle boil. Cover the pan with a lid and let it simmer. Refer here for ideal cooking times. It should take around 20-25 minutes for the avarekalu to become tender.
Step 3: Adding Coconut Masala
Once the avarekalu is cooked, add the coconut paste to the mixture. Ensure it's evenly distributed. Simmer for another 5-10 minutes, stirring occasionally to prevent sticking. Adjust seasoning with salt as needed.
Step 4: Final Touches
Garnish the Saaru with freshly chopped coriander leaves just before serving.
Serving and Enjoying Avarekalu Saaru
Avarekalu Saaru pairs wonderfully with steamed rice or freshly made rotis. Its aromatic and spicy nature is complemented by the warm, soft rice, making it a perfect dish for cold weather.
