Bafasom
Bafasom is a traditional dish with roots in Central African cuisine, celebrated for its rich flavors and hearty composition. Ingredients
- Beef - 1 pound, cubed
- Chicken - 1 pound, cut into pieces

- Cabbage - 1/2 head, shredded

- Coconut Milk - 1 can
- Chili - 1, chopped (optional)

- Oil - 2 tablespoons
- Stock - 2 cups
Preparation
Before you begin cooking, ensure all ingredients are prepared as specified: beef and chicken should be cut into even-sized pieces for uniform cooking. Chop the onions, tomatoes, and garlic. Slice the carrots and cube the potatoes. Shred the cabbage finely and grind the peanuts into a coarse powder.
Cooking Process
Step 1: Browning the Meat
Heat oil in a large pot over medium heat. Add the beef and sear until browned on all sides. Remove the beef and set aside. Repeat the process with the chicken pieces. This step adds depth of flavor to the Bafasom.
Step 2: Sautéing the Vegetables
In the same pot, add onions and sauté until translucent. Add garlic, letting it cook for just a minute until fragrant. Mix in the tomatoes and stir occasionally. Allow these ingredients to cook down into a flavorful paste.
Step 3: Adding the Rest
Add in the carrots and potatoes. Stir well and cook for 5 minutes. Return the browned beef and chicken to the pot. Season with salt and black pepper to taste.
Step 4: Simmering the Stew
Add stock and the ground peanuts. Stir to combine all the ingredients. Cover the pot and reduce heat to low, allowing the Bafasom to simmer for about 45 minutes. Make sure to check occasionally, adding more stock if the stew is too thick. You can set a timer for this.
Step 5: Final Touches
Pour in the coconut milk and add the cabbage. If you prefer a hint of heat, add the chili at this point. Stir well and let the stew cook for an additional 15 minutes, until the cabbage is tender.
