The dish's name, which means "pressed" in Portuguese, refers to the cooking method that involves sealing the pot with a mixture of flour and water to create a signature tender beef stew. Influenced by indigenous and Portuguese culinary traditions, Barreado melds diverse flavors into a comforting meal. Our version, Barreado Tropical, incorporates local fruits to give it a unique, fresh twist.

Step 1: Marinate the Meat

Combine beef, onion, garlic, bay leaves, paprika, cumin, black pepper, salt, and mustard powder in a large bowl. Mix well and let the flavors meld for at least 2 hours, but overnight is preferable.

Step 2: Prepare the Pot Sealer

In another bowl, mix cassava flour with enough water to form a dough. Knead this into a pliable, non-sticky consistency. This dough will be used to seal the pot.

Cooking Process

Step 3: Begin Cooking

Heat olive oil in a large clay or heavy-duty pot over medium heat. Add the marinated beef mixture and cook until the beef is browned on all sides.

Step 4: Add Fruits

Add banana, pineapple, papaya, and brown sugar to the pot. Stir everything together and let the mixture come to a gentle simmer.

Step 5: Seal and Simmer

Using the cassava dough, carefully seal the lid of the pot to ensure that no steam escapes. This traditional sealing method helps tenderize the beef. Set your cooking timer for 6-8 hours and let the pot simmer on low heat. Do not disturb the pot or break the seal.
