Bougna Bowl
The Bougna Bowl is a traditional dish from New Caledonia, an archipelago located in the South Pacific Ocean. This dish is deeply rooted in the Kanak culture, the indigenous people of New Caledonia. Bougna is typically prepared using local produce and it combines a variety of flavors and ingredients to create a hearty and flavorful meal.
Background of Bougna
Bougna, meaning "bundle" in the local language, was originally prepared by wrapping a variety of ingredients including root vegetables, meats, and coconut milk in banana leaves. The bundle was then traditionally cooked in an earthen oven called a "hudi," buried underground with hot stones. This cooking method infuses the ingredients with a smoky flavor while ensuring everything is tender and juicy.
Today, the Bougna Bowl we present is a modern adaptation of this traditional dish, bringing the flavors and essence of New Caledonia into a convenient and easy-to-make bowl.

Preparation
Step 1: Preparing the Meat
Chicken breast should be washed thoroughly and cut into bite-sized pieces. Season them with salt, black pepper, and lime juice. Let it marinate for at least 30 minutes to infuse the flavors.
Step 2: Preparing the Vegetables
Peel and cube the sweet potatoes and taro. You can choose to roast them slightly for added texture or use them raw in the bundle.
Cooking Process
Step 3: Assembling the Bougna Bowl
Lay out the banana leaves and layer the ingredients starting with the vegetable mix of sweet potatoes and taro. Follow this by placing the marinated chicken pieces. Add the chopped onion, minced garlic, grated ginger, and fit in the slices of red bell pepper. Finally, pour over the coconut milk and add a little more salt and pepper if desired.
Step 4: Wrapping and Cooking
Wrap the banana leaves tightly, ensuring there are no open gaps. Secure the bundle with cooking twine if necessary. This package will go into an oven preheated to 200Β°C (392Β°F) for approximately 1.5 hours. Ensure the package is well-sealed to trap in moisture and steam while cooking; this will tenderize the ingredients and enhance the flavors.
Cooking Timer
Using a cooking timer can help you to track the time efficiently so that the Bougna maintains its delightful flavors and perfect texture.
Step 5: Final Touches
Once the cooking timer is done, carefully unwrap the package and check if the chicken is fully cooked and the vegetables are tender. If they need more time, seal the package again and let it cook for an additional 15 minutes. After all, is done, sprinkle with fresh coriander leaves for extra aroma and serve over a bed of lightly sautΓ©ed spinach if desired.
