Bulgogi, a traditional Korean dish, translates to "fire meat" and is a classic staple in Korean cuisine. Originating from the Goguryeo era, it is known for its succulent slices of marinated beef grilled over an open flame. Over time, bulgogi has become synonymous with cultural gatherings and represents Korean hospitality and rich culinary history.
Ingredients
- Beef Ribeye - 1 pound thinly sliced
- Soy Sauce - 5 tablespoons
- Sugar - 2 tablespoons
- Sesame Oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 medium, grated
- Green Onion - 2, chopped
- Black Pepper - 1/2 teaspoon
- Asian Pear or Apple - 1/2, grated (optional for added sweetness)
- Carrot - 1, julienned

Preparation
Marinade Preparation
In a large mixing bowl, combine the soy sauce, sugar, sesame oil, garlic, grated onion, chopped green onions, and black pepper. Mix these ingredients until sugar dissolves completely. For a traditionally sweet marinade, incorporate the grated Asian pear or apple for enhanced flavor.
Meat Preparation
Ensure the beef ribeye is sliced very thinly, about 1/8 inch thick. This allows for optimal absorption of the marinade and quick grilling. If not pre-sliced, slightly freeze the beef for easier slicing.
Marinating the Meat
Add the sliced beef ribeye to the marinade bowl, ensuring each piece is fully coated with the mixture. Cover the bowl and refrigerate for at least 30 minutes to overnight for best results.

Grilling the Bulgogi
Traditionally, bulgogi is grilled over a charcoal grill; however, a stovetop pan or electric grill also works well. Preheat your chosen method over medium-high heat. Once hot, arrange the marinated beef cautiously onto the grill or pan. Grill each side for approximately 1-2 minutes until the meat is nicely browned and caramelized.
