Preparation
Begin by preparing the cabbage. Cut it into quarters and remove the core. Slice each quarter into bite-sized pieces. Place the cabbage in a large bowl and sprinkle sea salt over the leaves, making sure to coat each piece evenly. Allow the salted cabbage to sit for 1-2 hours in order for the leaves to wilt and release their moisture.
While the cabbage is salting, prepare the remaining ingredients. Peel and julienne the radish, chop the green onions, and mince the garlic and ginger. If you wish to use homemade fish sauce, now is the time to prepare it as well.
Marination Process
After the cabbage has finished salting, rinse it thoroughly under cold water to remove all of the excess salt. Carefully strain and squeeze out any remaining water. Return the wilted cabbage to the large bowl and add radish, green onions, garlic, ginger, fish sauce, red pepper flakes, sesame seeds, oyster sauce, and sugar. Mix everything well, ensuring the seasoning coat all the vegetables thoroughly.
At this point, add minced shrimp to the mixture, introduced to give a subtle sea flavor characteristic of Busan specialties. Stir the mixture again, double-checking all ingredients are evenly distributed.
Fermentation
Once mixed, the kimchi mixture is ready to commence fermentation. Carefully pack the seasoned vegetables into a clean, airtight container or jar. Store the jar at room temperature for 1 to 3 days, depending on your preference for fermentation. Over time, the kimchi will start developing its iconic tangy, savory flavors, accompanied by the sea-rich taste of the shrimp.
