Traditionally prepared by Indigenous Australians, this chutney has become a beloved staple in modern Australian cuisine, often served alongside meats, cheeses, or as a spread on toast.

  1. Wash the bush lemons thoroughly to remove any dirt or residue.
  2. Peel the bush lemons, ensuring you remove most of the white pith which can add unnecessary bitterness to the chutney.
  3. Finely chop the bush lemons, discarding any seeds during the process.
  4. Peel and mince the ginger and garlic.
  5. Finely chop the red chilli, adjusting the amount according to your preferred heat level.

Cooking Process

  1. In a large pot, combine the chopped bush lemons with half a cup of water and simmer over medium heat.
  2. Add the minced ginger and garlic to the pot, stirring occasionally for about 5 minutes until fragrant.
  3. Add one cup of white sugar and a half cup of brown sugar to the mix, stirring until both sugars dissolve completely.
  4. Pour in a cup of apple cider vinegar and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer, stirring occasionally, until it thickens, which can take up to one hour. Use a cooking timer to track this time.
  5. Add the chopped red chilli and a teaspoon of salt towards the end of the cooking process, adjusting seasoning to taste.
  6. Once the chutney has thickened to your desired consistency, remove it from the heat and let it cool slightly before transferring it to sterilized jars.
