Preparation
Step 1: Preparation of Ingredients
Begin by preparing your corn and beans by soaking them overnight. This helps in softening the pulses and reduces cooking time. Drain the soaked corn and beans and set them aside. Chop the cassava, sweet potatoes, and potatoes into bite-sized pieces. Ensure that the cabbage is chopped coarsely.
Step 2: Initial Cooking
In a large pot, heat the olive oil over medium heat. Add the onions and sauté until transparent. Then, incorporate the garlic and bay leaves, stirring for about one minute until aromatic.
Step 3: Cooking the Meats
Add the bacon, pork ribs, and chicken thighs. Cook until the meats are browned on all sides. Stir in the chorizo slices and cook for an additional 5 minutes.

Step 4: Combine the Ingredients
Once the meats are browned, add the soaked corn and beans to the pot. Stir in the chopped tomatoes, ensuring they are evenly distributed. Pour in enough water to cover the mixture generously. Add paprika, salt, and black pepper to taste.
Step 5: Simmer the Stew
Bring the pot to a boil, then reduce the heat to low and let it simmer gently. Allow the stew to cook for approximately 2 to 3 hours, or until the corn and beans are tender. During this time, stir occasionally and check the seasoning, adding more salt and black pepper if necessary.
Step 6: Final Touches
As the stew nears completion, add the chopped cassava, sweet potatoes, potatoes, and cabbage. Continue to simmer until all vegetables are tender and the flavors meld together.
