- Smoked fish - 1 cup, flaked
- Groundnut paste - 1/2 cup
- Pepper - To taste
- Salt - To taste
- Water - As needed
Preparation
To begin preparing your Cameroonian Harmony, first rinse the black-eyed peas under cold water and soak them overnight. This will help to soften the beans and reduce cooking time.
Once soaked, drain and rinse the black-eyed peas again, and then set aside. Peel and cube the cassava roots, chop the onion, mince the garlic, and dice the tomatoes. Ensure that the spinach is thoroughly washed and drained.
Cooking Instructions
- In a large pot, heat palm oil over medium heat. Add the chopped onion and minced garlic, stirring until they are golden brown.

- Once the rice is done, stir in the groundnut paste and spinach until well mixed.
