Preparation

- Line a baking tray with parchment paper, ensuring excess paper overhangs for easy removal later.
- In a heavy-bottomed saucepan, combine the honey and sugar and cook over medium heat. Stir occasionally until the sugar dissolves completely. You may want to start your cooking timer for about 10 minutes here.
- Increase the heat slightly and bring the mixture to a simmer, allowing it to reach 140°C (285°F) on a candy thermometer.
- While your syrup is cooking, beat the egg whites in a stand mixer until they form stiff peaks.
- Once the syrup reaches temperature, remove from heat and slowly drizzle it into the beaten egg whites while the mixer is still running.
- Add the vanilla extract and lemon zest at this stage. Mix until the mixture is thick and glossy.
- Fold in the toasted almonds, hazelnuts, and pistachios until evenly distributed.
- Pour the mixture into the prepared baking tray and press it down firmly using a greased spatula.
- Allow the turrón to set at room temperature for at least 2 hours, or until firm to the touch.
- Once set, lift from the tray using the parchment paper and cut into desired shapes or bars.
