Ingredients
- Onion - 1 large, finely chopped
- Bell pepper - 1, chopped (red or green)
- Tomato - 4 large, diced
- Carrot - 2 large, grated
- Baked beans - 1 can (410g)
- Garlic clove - 2 cloves, minced
- Ginger - 1 tsp, grated
- Chili - 1 or 2 depending on heat preference, chopped
- Curry powder - 2 tbsp
- Vegetable oil - 2 tbsp
- Salt - to taste
- Black pepper - to taste
Preparation Steps
- In a large pan, heat the vegetable oil over medium heat.
- Add the onion and sauté until it becomes translucent.
- Add the garlic, ginger, and chili, and sauté for another 2 minutes until fragrant.
- Add the bell pepper and carrot, and continue to sauté for about 5 minutes.
- Add the curry powder and stir well to coat all the vegetables.
- Add the tomato and cook for another 15 minutes until they break down into a sauce.
- Stir in the baked beans and mix well.
- Season with salt and black pepper to taste.
