- Onion - 1 large, chopped

- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste

- Cilantro - a handful, chopped

Preparation
Before we dive into the cooking process, make sure all your ingredients are prepped and ready. Chop the onion, mince the garlic, and peel and quarter the potatoes. Shell the fava beans if they are fresh. This ensures a smoother cooking experience.
Cooking Process
Step 1: Searing the Chicken
Begin by heating a large pot over medium-high heat. Add the pieces of chicken skin-side down and sear until golden brown on all sides. This should take about 5-7 minutes. Remove the chicken and set it aside.
Step 2: Sauté the Aromatics
In the same pot, add the onion and sauté until translucent. Add the garlic and cook for an additional 2 minutes. Add the cumin powder and red pepper flakes for a burst of aroma.
Step 3: Adding the Vegetables
Return the chicken to the pot along with the potatoes and corn. Pour in the water or chicken broth. Add the bay leaves, and season with salt and black pepper to taste.
Step 4: Simmering
Bring the mixture to a simmer and cover the pot. Let it cook for about 40-45 minutes, or until the chicken is fully cooked and tender, ensuring the flavors meld together beautifully.
Step 5: Finishing Touches
Add the fava beans and arepas, and let cook for an additional 20 minutes. This gives the beans time to tenderize and the arepas to soak up the flavorful broth. Add the chopped cilantro just before serving.
How to Enjoy Chanka de Pollo
Chanka de Pollo is best enjoyed fresh from the pot. Serve it in deep bowls to accommodate the hearty broth, chunks of chicken, and potatoes. Garnish with a generous squeeze of lime over the top for a zesty finish. Pair it with crusty bread or a side of rice if desired.
