Ingredients
- Chenna - 250 grams
- Onion - 2 medium sized, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, grated
- Tomato - 2 large, pureed
- Green chilies - 2, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt to taste
- Oil - 2 tablespoons
- Water - 1 cup
- Coriander leaves for garnishing
Preparation
Making the Chenna
To begin, if you don't have chenna ready, you can make it fresh. Boil a liter of milk and once it comes to a boil, add a tablespoon of lemon juice or vinegar. As the milk curdles, strain it using a muslin cloth to separate the chenna from the whey. Rinse the chenna under cold water to remove any tanginess of the lemon or vinegar. Squeeze out the excess water and set it aside.
Preparing the Spice Mix
In a small bowl, combine turmeric powder, coriander powder, and red chili powder. This will ensure an even distribution of spices during cooking.
Cooking Process
Step 1: Sautéing the Base
