Preparation

Add 2 tablespoons of lemon juice gradually and stir until the milk curdles, causing the whey to separate from the solids. Drain using a muslin cloth, rinse under cold water to remove acidity, and squeeze to remove excess water. Let it hang for about 30 minutes to drain completely.
Sugar Preparation
While the chhena is draining, prepare a sugar syrup. In a pan, combine 1 cup of sugar with half a cup of water. Heat until the sugar dissolves completely but do not let it caramelize. Allow it to cool slightly.
Cooking Process
Step 1: Kneading Chhena
After the chhena is properly drained, transfer it to a plate and knead it thoroughly. The key to a smooth and dense Chhanar Sandesh is the consistency of the kneaded chhena. It should be creamy, smooth, and free of lumps. This might take around 10-15 minutes of diligent kneading.
Step 2: Cooking the Mixture
In a non-stick pan, add the kneaded chhena and incorporate the prepared sugar syrup. Cook the mixture over low heat.
