Preparation

Prepare the Dough

Start by combining flour and salt in a large mixing bowl. Add in butter and mix until the mixture resembles coarse crumbs. Gradually add water and mix until the dough starts to come together. Wrap the dough in plastic wrap and refrigerate for at least one hour.

Prepare the Filling

While the dough is resting, prepare the filling by mixing dulce de leche with a small amount of vanilla extract. This will be used to fill the center of each empanada.

Assembling the Empanadas

Preheat your oven to 375°F (190°C). Roll out the dough on a lightly floured surface to 1/4 inch thickness. Cut out circles using a cookie cutter or a glass. On each circle, place a spoonful of the prepared dulce de leche filling in the center. Fold the dough over to make a half-circle, seal the edges by pressing down with a fork.

Baking

Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden finish. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.

Coating

While the empanadas are baking, mix sugar and cinnamon in a bowl. Once the empanadas are done baking, roll them in the sugar-cinnamon mixture while still warm to give them that iconic churro flavor.
