Ingredients
- Rockfish (400g, filleted)
- Clams (200g, scrubbed)
- Prawns (150g, peeled and deveined)
- Saffron threads (a pinch)
- Wild Rice (150g)
- Pumpkin (200g, diced)
- Fennel Bulb (1, sliced)
- Lemon (1, juiced and zested)
- Thyme (2 teaspoons, fresh and chopped)
- Parsley (for garnish, chopped)
- Olive Oil (3 tablespoons)
- Garlic (2 cloves, minced)
- Sea Salt (to taste)
- Black Pepper (freshly ground, to taste)
Preparation
Begin by rinsing the wild rice under cold water. This helps remove any excess starches and prevents the rice from becoming gummy. Set aside. Soak the saffron threads in a tablespoon of warm water to release their vibrant color and aroma, enhancing the overall dish.
Seafood Preparation
To prepare the rockfish, season it lightly with lemon juice, sea salt, and black pepper. Allow it to marinate while preparing other ingredients. Clean and scrub the clams under cold running water to remove any sand or debris. Pat dry the prawns after peeling and deveining.
Vegetable Preparation
Chop the pumpkin into small cubes, slice the fennel bulb thinly for enhanced flavor and texture. Mince the garlic cloves finely to release their rich aroma when cooking.
Cooking Process
Step 1: Cooking the Wild Rice

Step 2: Sautéing the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced fennel bulb and pumpkin cubes. Sauté until the pumpkin starts to soften and the fennel becomes translucent, approximately 8-10 minutes. Stir in the garlic, cooking just until fragrant.
Step 3: Preparing the Seafood
Push the vegetables to one side of the skillet and increase heat slightly. Add the rockfish fillets and prawns, cooking until the prawns turn pink and opaque, and the rockfish is flaky and tender, about 4-5 minutes per side.
Step 4: Steaming the Clams
Add the clams to the pan, cover, and steam until the clams begin to open, approximately 5-7 minutes. Discard any that do not open.
Step 5: Final Assembly
Incorporate the cooked wild rice into the skillet with the seafood-vegetable mix. Stir in the soaked saffron threads and their water for a burst of color and flavor. Add a splash of lemon juice and sprinkle with chopped thyme and parsley for freshness.
