Dutch Stamppot
Introduction to Stamppot
Stamppot is a traditional Dutch dish with origins tracing back to the 15th century. It is considered a comfort food, especially during the winter months, and is enjoyed by many across the Netherlands. The word "stamppot" translates to "mash pot," which aptly describes the dish as it comprises mashed potatoes mixed with vegetables. Over the centuries, it has evolved from a simple meal to a variety of combinations featuring sausages, bacon, and gravy.
Ingredients
- Potatoes - 800 grams
- Kale - 300 grams
- Sausages (Rookworst) - 2 pieces
- Bacon - 100 grams
- Butter - 50 grams
- Milk - 100 ml
- Salt - to taste
- Pepper - to taste
- Nutmeg - a pinch (optional)
Preparation
Preparing the Potatoes and Kale
Begin by peeling and chopping the potatoes into quarters. Rinse them in cold water and place them in a large pot. Wash the kale thoroughly, removing any tough stems, and chop it roughly. Add the kale to the pot with the potatoes.
Cooking the Stamppot
- Fill the pot with enough cold water to slightly cover the potatoes and kale. Add a pinch of salt and bring to a boil over medium heat.
- Once boiling, reduce the heat and let it simmer for about 20 minutes or until the potatoes are tender. Check doneness by poking them with a fork.
Cooking the Sausages and Bacon
- As the potatoes and kale cook, prepare the sausages according to package instructions. Typically, they can be boiled or fried.
- In a separate pan, fry the bacon until crispy.
Mashing and Assembling the Stamppot
- Drain the pot of potatoes and kale. Return them to the pot.
- Add butter, warm milk, and season with salt, pepper, and a pinch of nutmeg.
- Mash the mixture until creamy and well combined.
- Stir in the crispy bacon.
Serving Dutch Stamppot
Serve the stamppot topped with the prepared sausages. It is best enjoyed immediately, piping hot. For an authentic experience, serve with mustard on the side. Some also enjoy a ladle of gravy drizzled over the dish for extra richness.
Tips for Enjoying Stamppot
- Experiment with different vegetables such as carrots, onions, or endive in place of kale.
- Pair it with a hearty Dutch beer to complement the flavors.
- For a vegetarian version, opt for vegetable sausages and remove bacon.
Stamppot truly encapsulates the tradition and warmth of Dutch cuisine, offering a nourishing meal that brings comfort to any dining table. Happy cooking!
