Fashtooh
Introduction

Ingredients

Preparation
Step 1: Marinade the Lamb
In a large bowl, combine the lamb cubes with yogurt, cinnamon, cumin, and coriander. Mix well to ensure the lamb is thoroughly coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
Step 2: Cook the Lamb
In a large pot, heat olive oil over medium-high heat. Add the marinated lamb cubes in batches to avoid overcrowding. Sear the lamb on all sides until browned. Remove the lamb from the pot and set aside.
Step 3: Sauté Onions and Garlic
In the same pot, add more olive oil if necessary, then add the onions and cook until translucent. Add the garlic and cook for an additional 1-2 minutes until fragrant.
Step 4: Simmer the Lamb
Return the browned lamb to the pot. Add salt and black pepper to taste. Pour in enough water to cover the lamb. Reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the lamb is tender.

While the lamb is simmering, prepare the rice. Rinse the rice under cold water to remove excess starch. In a separate pot, bring 4 cups of water to a boil. Add the rice, reduce heat to low, cover and cook until rice is done, about 15-20 minutes.
