It's traditionally served during family gatherings, offering a beautiful depiction of the melding of flavors and communities.
Ingredients
- Black beans - 1 lb
- Pork shoulder - 1 lb
- Beef brisket - 1 lb
- Pork sausage - 1 lb
- Pork ribs - 1 lb
- Bacon - 1/2 lb
- Onion - 2 large
- Garlic - 4 cloves
- Bay leaves - 2 leaves
- Olive oil - 2 tbsp
- Black pepper - to taste
- Salt - to taste
- Orange - for serving
- Cooked rice - for serving
- Cooked collard greens - for serving
- Sliced bananas - optional, for garnish
Preparation Steps
Step 1: Preparing the Black Beans
First, rinse the black beans thoroughly under cold water. Place them in a large bowl and cover with water. Allow them to soak overnight or for at least 8 hours. This helps to soften the beans and reduce the cooking time.
Step 2: Prepping the Meats
While the beans are soaking, divide the pork shoulder, brisket, and sausage into manageable pieces. The bacon should be diced into small cubes, and the ribs should be cut into individual servings.
Step 3: Preparing the Aromatics
Chop the onions and mince the garlic. These will form the aromatic base of our Feijoada Royale.
Cooking Process
Step 1: Cooking the Black Beans
Drain the soaked beans and transfer them into a large, heavy-bottomed pot. Cover the beans with fresh water, about two inches above their level. Add the bay leaves, and bring the pot to a simmer.
Step 2: Sautéing Aromatics and Meats
In a separate pan, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove and set aside. In the same pan, add the onions and garlic, sautéing until translucent. Add this aromatic mix to the beans.
Step 3: Combining Everything
Add the prepared pork shoulder, brisket, sausage, and ribs to the pot with the beans. Season with black pepper and salt, according to taste. Allow the mixture to simmer gently, stirring occasionally.
Step 4: Cooking to Perfection
Continue cooking until the beans and meats are tender, which should take about 2-3 hours. Check intermittently to ensure there is enough liquid; add water if necessary.
How to Serve and Enjoy
Feijoada Royale is best enjoyed with fluffy cooked rice and a side of collard greens. Garnish with slices of orange, which helps cut through the richness of the dish. Optionally, top each serving with some sliced bananas for a sweet counterpoint to the savory stew. Gather your friends and family, and indulge in this royal feast that embodies the heart of Brazilian culture.
