Flammeküche Stringomadaire
Background
Flammeküche, also known as "Tarte Flambée," is a specialty originating from the Alsace region of France. Traditionally, it was a dish made quickly by farmers to test the heat of their wood-fired ovens. With thinly rolled bread dough topped with fromage blanc, onions, and lardons, it offers a simple yet delectable taste that has stood the test of time. Our version, dubbed Stringomadaire, incorporates unique elements whilst maintaining the classic approach.
Ingredients
- Dough - 250g
- Fromage Blanc - 200g
- Crème Fraîche - 100g
- Bacon (or Lardons) - 100g
- Onions - 2 medium-sized
- Nutmeg - A pinch
- Salt - To taste
- Black Pepper - To taste
- Olive Oil - 1 tbsp
- Gruyère Cheese - Optional, for added richness
Preparation
Preparing the Dough
The base of a Flammeküche is the thin crust made from dough. Carefully roll it out to ensure a uniform thickness, about the size of your baking sheet. The dough should be thin to get the desired crispness when baked.
Mixing the Toppings
Combine fromage blanc and crème fraîche in a bowl. Add a pinch of nutmeg, a sprinkle of salt, and black pepper to taste. Mix until smooth.
Sautéing the Onions
Slice onions thinly. Heat olive oil in a skillet over medium heat and sauté the onions until they are translucent and lightly golden for added sweetness.
Cooking Process
Assembling the Flammeküche Stringomadaire
Preheat your oven according to your cooking timer settings. Spread the cheese mixture evenly over the rolled out dough. Top with sautéed onions, bacon, and if desired, add Gruyère cheese for extra flavor.
Baking
Bake the Flammeküche in the preheated oven until the edges are crispy and golden brown, which should take approximately 12-15 minutes, depending on your oven and thickness of the dough. Refer to your cooking timer for accuracy.
How to Enjoy
Once baked, remove from the oven and let it cool slightly. Cut into rectangular or triangle shapes and serve immediately. Best enjoyed hot with a crisp, refreshing white wine, the Flammeküche Stringomadaire makes for an excellent appetizer or main dish served alongside a seasonal salad.
