- Butter - 1/2 cup, chilled and diced
- Salt - 1 teaspoon
- Water - 1/2 cup, iced
- Ground Beef - 1 pound
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Scotch Bonnet Pepper - 1, finely chopped
- Thyme - 2 teaspoons
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Allspice - 1/2 teaspoon
- Nutmeg - pinch
- Bread Crumbs - 1/4 cup
- Oil - for frying
- Egg - 1, for egg wash
Preparation
Pastry
In a large bowl, combine flour and salt. Add the chilled butter and cut it into the flour using a pastry cutter until the mixture resembles coarse crumbs. Gradually add the water, gently mixing until the dough holds together. Wrap the dough in plastic and refrigerate for about 30 minutes to an hour.
Filling
Heat a skillet over medium heat and add a little oil. Sauté onion and garlic until fragrant. Add the ground beef and cook until browned. Stir in the Scotch Bonnet Pepper, thyme, cumin, turmeric, allspice, and nutmeg. Mix well, ensuring all meat is coated with spices. Cook for an additional 3-4 minutes. Add bread crumbs to absorb excess moisture. Remove from heat and let it cool.
Cooking Instructions
Preheat some oil in a deep frying pan. Roll out the chilled dough to a thin sheet on a lightly floured surface. Cut out circles using a pastry cutter. Place a generous amount of filling in the center of each circle. Brush the edges with egg wash and fold the dough over to form a half-moon shape. Press the edges with a fork to secure and seal the patties.
Gently slide each patty into the hot oil. Fry until golden brown on each side. Remove and drain on paper towels. Enjoy within 10 minutes of frying, or use a cooking timer to track for later enjoyment.
