Garagum Gyzyl is a traditional dish hailing from the unique culinary heritage of Turkmenistan. Known for its deliciously rich and sweet flavor, this dish is a staple in many Turkmen households. Ingredients
- Almonds - 2 cups
- Sugar - 1 cup
- Honey - 1/2 cup
- Butter - 200g
- Cinnamon - 1 tsp
- Vanilla - 1 tsp
- Water - 1/4 cup
- Salt - a pinch
Preparing the Ingredients
Step 1: Blanching Almonds
Start by blanching the almonds. Boil water in a pot and add the almonds to it. Let them boil for about 2 minutes. Remove the almonds and rinse them under cold water. Peel off the skins, set aside to dry.
Step 2: Grinding Almonds
Once dry, grind the almonds into a fine powder using a food processor. Ensure there are no chunks left.
Cooking Process
Step 3: Creating the Almond Mixture
In a large saucepan, melt the butter over medium heat. Add the ground almonds and stir continuously until they turn a golden brown, usually around 10 minutes.
Step 4: Sweetening the Mixture
Add sugar, honey, and water to the saucepan. Stirring constantly, let the mixture cook for about 5 minutes until the sugar dissolves completely and everything is well combined.
Step 5: Adding Flavor
Stir in cinnamon, vanilla, and a pinch of salt, mixing well to combine all flavors evenly.
Step 6: Baking
Preheat your oven to 180°C (350°F). Transfer the mixture into a greased baking dish. Press it down firmly with a spatula to form an even layer. Bake in the oven for about 20 minutes or until the top is golden and crisp. Use a cooking timer to monitor the time during baking.
