Knead it gently on a floured surface until it becomes smooth and elastic, approximately 10 minutes. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm area for about 1 to 2 hours or until it doubles in size.

Step 3: Prepare the Filling

In a separate bowl, mix the remaining sugar with the remaining 1/2 cup of butter until it becomes a smooth paste. If you like, you can add chopped walnuts for extra texture and flavor. This mixture will be used to fill the layers of the Gatah.

Step 4: Roll and Fill the Dough

Preheat your oven to 350°F (175°C). Punch down the risen dough and divide it into four equal parts. Roll each part into a thin rectangle on a floured surface. Spread the prepared filling evenly over each dough rectangle. Carefully roll each rectangle into a log shape, sealing the edges as you go. Place the rolls seam-side down on a baking sheet lined with parchment paper.

Step 5: Egg Wash

In a small bowl, beat the remaining egg and brush it over the top of each roll to give the Gatah a golden and glossy finish.

Step 6: Bake

Bake the Gatah in your preheated oven for about 30 to 35 minutes or until they are golden brown. Check the progress through a cooking timer to ensure perfect results.
