Ghee Bhaat
Introduction
Ghee Bhaat is a traditional Indian rice dish rich in flavors and aroma. It has been a part of Indian cuisine for centuries, tracing its roots to the kitchens of ancient India where ghee was considered a sacred and essential cooking ingredient. Ghee Bhaat is particularly popular in the regions of North and West India and is often served as a comfort food or during special occasions and festivals.
Ingredients
- Rice - 2 cups
- Ghee - 4 tablespoons
- Cumin seeds - 1 teaspoon
- Cinnamon stick - 1 inch
- Cloves - 4
- Cardamom pods - 4
- Salt - to taste
- Water - 4 cups
- Saffron strands - a pinch (optional)
- Bay leaf - 1
- Onion slices (for garnishing) - 1 medium, fried until crispy
- Coriander leaves (for garnishing) - finely chopped
Preparation
Before starting to cook, it's important to prepare the ingredients properly. Begin by rinsing the rice thoroughly under cold water until the water runs clear. This will help remove excess starch and prevent the rice from becoming sticky. Soak the rice in fresh water for about 20 minutes, then drain completely.
If using saffron, soak it in a tablespoon of warm milk to release its color and flavor while you prepare the other ingredients.
Cooking Process
Heat ghee in a heavy-bottomed pot or a pressure cooker over medium heat. Once hot, add the cumin seeds and allow them to sizzle for a few seconds.
Add the cinnamon stick, cloves, and cardamom pods. Sauté for about 1 minute until fragrant.
Add the soaked and drained rice to the pot. Stir gently to mix the rice with the spices and ghee.
Add salt to taste and the required amount of water to the pot. If you soaked saffron, add the saffron milk at this point.
Bring the water to a boil, then reduce the heat to low, cover the pot with a lid, and let the rice simmer for about 15-20 minutes. Check the rice for doneness by pressing a grain between your fingers; it should be soft but not mushy.
If using a pressure cooker, close the lid and cook until you hear one whistle on medium heat, then turn off the heat and allow the pressure to release naturally.

Once the rice is cooked, gently fluff it with a fork. Transfer the Ghee Bhaat to a serving dish and garnish with fried onion slices and fresh coriander leaves. This dish pairs well with a variety of accompaniments, such as yogurt, pickle, or a simple lentil curry.
