Ingredients
- 500g yak meat (thinly sliced)
- 400g cauliflower (florets separated)
- 1 tablespoon ginger (minced)
- 1 tablespoon garlic (minced)
- 1 large onion (thinly sliced)
- 2 red chilies (sliced)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon cumin seeds
- 1/2 teaspoon black pepper
- Juice of 1 lime
- Salt to taste
- Fresh coriander leaves (for garnish)
Preparation
Step 1: Preparing the Yak Meat
The first step in mastering the Gobi Yak Stir is ensuring that the yak meat is prepped correctly. Thinly slice the yak, cutting against the grain to help tenderize it. Marinate the slices with half of the lime juice, a dash of salt, and black pepper, then set aside for about 20 minutes.
Step 2: Preparing the Vegetables
While the meat is marinating, get your vegetables ready. Break the cauliflower into small, bite-sized florets. Slice the onion and set it aside with the minced ginger and garlic. Slice the red chilies, adjusting the amount for your preferred spice level.
Cooking Process
Step 1: Searing the Yak
Heat a large pan or wok over high heat and add the sesame oil. Once the oil is shimmering, add the marinated yak meat. Sear it quickly, ensuring the outside is golden brown while remaining juicy inside. Remove the seared meat and set it aside.
Step 2: Stir-Frying the Vegetables
In the same pan, add a little more sesame oil if necessary and toss in the cumin seeds until they crackle. Add the sliced onion followed by ginger and garlic. Stir those around until the onions turn translucent.
Next, incorporate the prepared cauliflower and red chilies, sprinkling the turmeric and ground coriander over the top. Stir-fry for about 5-7 minutes.
Step 3: Combining Everything
Return the seared yak meat into the pan. Pour in the soy sauce and the remaining lime juice. Mix everything thoroughly and let it cook for a further 3-5 minutes, allowing the flavors to meld together.
