Ingredients
- Flattened Rice (Poha) – 2 cups
- Tamarind – lemon-sized ball

- Curry Leaves – 10 leaves
- Green Chilies – 2, chopped
- Dry Red Chilies – 2
- Turmeric Powder – 1/4 teaspoon
- Salt – to taste
- Grated Coconut – 3 tablespoons
- Peanuts – 2 tablespoons
- Sesame Seeds – 1 teaspoon
- Fresh Coriander Leaves – for garnish
- Oil – 2 tablespoons
Preparation
Before you start the cooking process, it's essential to prepare the ingredients properly. Begin by soaking the tamarind in warm water for about 10 minutes. Once soaked, extract the pulp by squeezing the tamarind in the water and keep it aside.
Preparing the Poha
- Take the flattened rice in a large bowl and wash it under running water. Ensure it retains some firmness by not soaking it for too long. Drain the water completely.
- Add turmeric powder and salt to the drained poha, mix gently, and set aside.
Cooking Instructions
Step 1: Roasting the Sesame Seeds
- In a pan, dry roast sesame seeds on low flame until they turn golden brown. Remove and keep aside.
Step 2: Preparing the Gojju
- Heat oil in a pan. Add mustard seeds and allow them to splutter.
- Add urad dal, chana dal, and sauté until they become golden brown.
- Introduce green chilies, dry red chilies, and curry leaves. Sauté for a minute.
- Add the extracted tamarind pulp, along with jaggery, and stir well to dissolve the jaggery.
- Allow the mixture to simmer until it thickens slightly, forming the "Gojju".
Step 3: Combining Poha with Gojju
- Once the gojju is ready, add the prepared poha to the pan.
- Mix gently and ensure the poha is well coated with the tamarind mixture.
- Cover the pan and let it cook for 3 minutes. (Set Cooking Timer).

- Add the dry roasted sesame seeds, peanuts, and grated coconut to the pan.
- Mix well to combine all ingredients thoroughly.
- Garnish with chopped fresh coriander leaves before serving.
