Halloumi Saganaki
About Halloumi Saganaki
Halloumi Saganaki is a popular Greek appetizer that brings together the robust flavor of halloumi cheese with the simplicity of olive oil and a hint of lemon. "Saganaki" refers to any number of Greek dishes prepared in a small frying pan, itself called a "saganaki" or "sagani." Halloumi cheese has been produced on the island of Cyprus for hundreds of years and traditionally involves a unique blend of goat's and sheep's milk, though cow's milk can also be used. This recipe is not only simple but showcases the unique qualities of halloumi, a cheese known for its high melting point, which makes it perfect for frying. In the hot Greek summers, Halloumi Saganaki often serves as a delightful appetizer that holds its own against a backdrop of fresh salads and rustic bread.
Ingredients
- Halloumi cheese (250 grams, sliced)
- Flour (for dusting)
- Olive oil (2 tablespoons)
- Lemon (1, cut into wedges)
- Black pepper (to taste)
- Fresh parsley (chopped, for garnish)
Preparation
1. Prepare the Halloumi Cheese
Start by slicing the halloumi cheese into pieces approximately 1 cm thick. This thickness allows the cheese to crisp up nicely on the outside while maintaining a soft, chewy interior.
2. Dust with Flour
Lightly coat each slice of cheese with flour. This step helps create a crispy golden crust and prevents the cheese from sticking to the pan.
Cooking Process
1. Heat the Olive Oil
In a small frying pan or "saganaki," heat 2 tablespoons of olive oil over medium-high heat. You want the oil to be hot enough for frying. To test, drop a pinch of flour into the oil; it should sizzle upon contact.
2. Fry the Halloumi
Place the halloumi slices into the pan, ensuring they do not overlap. Fry each side for about 2-3 minutes or until golden brown. Use a spatula to gently flip the cheese to prevent it from breaking. Adjust the heat if necessary to avoid burning. Use a cooking timer to precisely measure frying time.
3. Season and Serve
Once both sides are crispy and golden, remove the halloumi from the pan and place it on a serving dish. Squeeze fresh lemon juice over the top to enhance the flavor and add a refreshing zest. Dust with freshly ground black pepper to taste and garnish with chopped parsley.
Enjoying Halloumi Saganaki
Halloumi Saganaki is best enjoyed immediately while the cheese is still hot. Serve alongside a crisp white wine or a refreshing lager to complement its salty, slightly tangy flavor. Pair with olives, crusty bread, or a light green salad for a traditional Greek dining experience. This dish also makes a great addition to a mezze platter, offering a unique texture and taste that stands out amongst other appetizers.
