Huo Shao
Huo Shao, also known as Chinese meat pie, is a popular dish that has a rich history dating back to the Han dynasty. Traditionally, it consists of a crispy, flaky crust filled with a savory mixture of minced meat and spices. Known for its robust flavors and satisfying textures, Huo Shao has become a beloved street food across China.
Ingredients
- Flour - 2 cups
- Water - 1 cup
- Salt - 1 teaspoon
- Ground pork - 1/2 pound
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 1 clove, minced
- Scallions - 2, finely chopped
- Sesame oil - 1 tablespoon
- Vegetable oil - for frying
Preparation
Making the Dough
In a large mixing bowl, combine flour, salt, and slowly add water. Mix until a dough forms, then knead until smooth and elastic. This process should take about 10 minutes. Allow the dough to rest for 30 minutes.
Preparing the Filling
In another bowl, combine ground pork, soy sauce, ginger, garlic, scallions, and sesame oil. Mix well to ensure all ingredients are evenly distributed.
Cooking Process
Assembling the Huo Shao
Divide the dough into 8 equal pieces. Roll each piece into a flat circle. Place a spoonful of the meat filling in the center of each piece of dough. Fold the edges over the filling and pinch to seal, forming a pouch. Flatten gently to form a disc shape.
Frying the Huo Shao
Heat vegetable oil in a pan over medium heat. Carefully add the Huo Shao, a few at a time, and fry for approximately 5 minutes per side or until golden brown and crispy. Use a cooking timer to ensure even cooking. Remove and drain on paper towels.
How to Enjoy
Huo Shao is best enjoyed hot and fresh out of the pan. These crispy, savory pies can be served as a snack, appetizer, or main dish. Pair with a dipping sauce of your choice, such as chili oil or vinegar, to enhance the flavors.
