Izmir Portakal Pistasi
Introduction
Izmir Portakal Pistasi is a decadent dessert originating in the coastal city of Izmir, Turkey. Known for its bright and vibrant flavors, this cake beautifully combines the richness of pistachios and the zesty notes of fresh oranges, making it a perfect delicacy to enjoy during festive occasions or as a unique treat to savor with family and friends.
Historically, Izmir has been a melting pot of different cultures, and this dessert embodies that fusion. The use of oranges can be traced back to the abundance of citrus fruits in the Mediterranean region, while pistachios are a staple in many Middle Eastern desserts, contributing a nutty depth that balances the citrusy sweetness.
Ingredients
- Pistachios - 1 cup, shelled and unsalted
- Oranges - Juice and zest of 3 medium oranges
- Eggs - 4 large
- Sugar - 1 cup
- All-purpose flour - 1 and 1/2 cups
- Baking powder - 2 teaspoons
- Olive oil - 1/2 cup
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Cream - For whipping and serving
Preparation
Begin by preheating your oven to 350°F (175°C). Grease a round cake pan with butter or line it with parchment paper for easy removal.
Preparing the Pistachios
- Place the pistachios in a food processor and pulse until they are finely ground. Be careful not to process them into a paste.
- Set aside a tablespoon of the ground pistachios for garnishing.
Mixing the Batter
- In a large mixing bowl, whisk the eggs and sugar together until light and fluffy, about 5 minutes.
- Add the olive oil, vanilla extract, and the orange juice and zest. Mix well.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the ground pistachios (reserve the tablespoon).
Cooking Process
Pour the batter into the prepared cake pan and smooth the top with a spatula. Place it in the preheated oven and let it bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Refer to a cooking timer to keep track of the time.
After baking, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving Suggestion
Once fully cooled, top the cake with freshly whipped cream and sprinkle with the reserved ground pistachios.
Slices of Izmir Portakal Pistasi are best served with a side of fresh orange segments and a cup of Turkish tea.
