Kannoli tal-Gewż

Preparation of the Dough
In a large bowl, mix the flour, a pinch of salt, and sugar together. Cut the butter into small cubes and rub it into the dry ingredients until the mixture resembles breadcrumbs. Create a well in the center and add the Marsala wine and egg. Mix it until a dough forms, knead the dough on a lightly floured surface until it’s smooth, cover with plastic wrap and refrigerate for at least an hour.
Preparation of the Filling
While the dough is resting, prepare the filling. In a medium bowl, combine the ricotta cheese, icing sugar, walnuts, vanilla extract, and cinnamon. Mix until well blended. Cover and refrigerate the mixture until needed.

Remove from oil and let them cool slightly before carefully removing the shells from the forms.
Once the shells are completely cooled, fill a piping bag with the ricotta and walnut filling. Pipe the filling into each end of the cannoli shells, being sure to fill them completely.
