Kanyah Bites

Background and History

Kanyah Bites, a bite-sized version of the traditional Kanyah, has its roots in West African cuisine, particularly popular in Nigeria and Ghana. Known for its nutritious benefits and delightful crunch, it is a staple snack enjoyed during both casual and festive occasions.

The original Kanyah is a rich mixture of ground peanuts and coarsely ground gari, a type of fermented cassava flour. Kanyah Bites maintain the essence of traditional Kanyah while offering a convenient, easy-to-serve format that is perfect for modern snacking.

Ingredients

Preparation

Roasting the Peanuts

Ensure your peanuts are well-roasted for an optimal flavor. If you have bought raw peanuts, roast them in a dry pan over medium heat, stirring continuously until they turn golden brown and give off a nutty aroma.

Grinding the Ingredients

Using a food processor or heavy-duty grinder, grind the peanuts into a coarse consistency. Be cautious not to over-process them into paste.

Mix the ground peanuts with gari, sugar, and salt. Stir thoroughly until the mixture is homogeneous.

Mixing and Molding

Gradually add water into the mixture while stirring until it holds together but is still somewhat crumby.

Grease your hands with coconut oil and take small portions of the mixture, rolling them into bite-sized balls.

Place each ball on a tray lined with parchment paper. Let them sit at room temperature to firm up.

Cooking Process

The mixture doesn't require further cooking; however, to enhance the texture and flavor, you can optionally bake the Kanyah Bites. Preheat your oven to 150°C (302°F).

  1. Place the tray of Kanyah Bites in the oven.
  2. Bake for 10-15 minutes until they are lightly golden. Avoid over-baking, which may cause them to dry out excessively.
  3. Remove from the oven and allow them to cool completely, which will ensure a crisp texture.

Enjoying Kanyah Bites

These delightful Kanyah Bites can be stored in an airtight container for up to two weeks. They make an excellent snack for any time of day.

Enjoy them alongside a hot cup of tea or coffee, or serve them at gatherings for a traditional West African experience. They also pair well with fresh fruits such as bananas or mangoes for a refreshing combination.

For an indulgent treat, dip the Kanyah Bites in melted chocolate or sprinkle with cinnamon or nutmeg before serving.

Whether with friends or family, let the savory-sweet notes of Kanyah Bites bring warmth and tradition to your table.
