Khao Soi Noodle Soup
Background and History of Khao Soi
Khao Soi is a rich and creamy coconut noodle soup originating from the culinary traditions of Northern Thailand. This dish is heavily influenced by Chinese Muslims who journeyed through Southeast Asia, as well as Burmese culinary practices. Known for its aromatic flavors, Khao Soi is a favorite among locals and tourists alike, earning its place in the world of popular street foods. The balance of spices, crisp fried noodles, and hearty broth makes it both a comforting and exotic meal.
Ingredients
- Coconut milk - 400 ml
- Chicken (thighs or drumsticks) - 500 g
- Egg noodles - 200 g
- Red curry paste - 2 tablespoons
- Curry powder - 2 teaspoons
- Turmeric powder - 1 teaspoon
- Garlic (minced) - 3 cloves
- Ginger (minced) - 1 tablespoon
- Fish sauce - 2 tablespoons
- Palm sugar - 1 tablespoon
- Lime - 1
- Shallots (sliced) - 3
- Vegetable oil - for frying
- Cilantro (for garnish)
- Pickled mustard greens (optional, for garnish)
Preparation
Before diving into cooking, it's essential to prepare all of your ingredients. Firstly, marinate the chicken by rubbing it with a mixture of curry powder and turmeric powder. Let it sit for about 30 minutes while you prepare the other ingredients. Slice the shallots thinly and set them aside for garnish. Mince the garlic and ginger. Next, heat some vegetable oil in a pan, and fry a portion of the egg noodles until crispy. Drain them on a paper towel and set aside to use as a topping.
Cooking Process
Step 1: Cooking the Chicken
In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the minced garlic and ginger, stirring until fragrant. Next, add the red curry paste and stir for a couple of minutes until it combines well with the garlic and ginger. Add the marinated chicken and cook until it's no longer pink on the outside.
Step 2: Creating the Broth
Once the chicken is browned, pour in the coconut milk and a cup of water. Bring to a gentle simmer and allow the chicken to cook thoroughly, soaking up all the flavors. Stir in the fish sauce and palm sugar. Allow the broth to simmer for about 15-20 minutes, or until the chicken is cooked and tender, stirring occasionally to prevent sticking.
Step 3: Preparing the Noodles
While the broth is simmering, boil the remaining egg noodles according to the package instructions. Typically, this will take about 4-5 minutes. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside until ready to serve.
Serving Suggestions
To serve your Khao Soi, place a portion of the boiled noodles in individual bowls. Ladle over the coconut soup with pieces of tender chicken. Top with crispy fried noodles. Garnish with sliced shallots, a wedge of lime, cilantro, and if desired, some pickled mustard greens for an authentic touch.
