Kimchi Surprise is a vibrant and flavorful dish that brings a modern twist to the traditional Korean staple, kimchi. Legendary for its complex combination of fermented flavors, piquant spices, and crunchy textures, kimchi dates back to the Three Kingdoms period in Korea, about 2,000 years ago. Ingredients
- Kimchi - 2 cups
- Pork belly - 500g
- Tofu - 200g, firm
- Garlic - 4 cloves, minced

- Soy sauce - 3 tbsp
- Sesame oil - 1 tbsp

- Jasmine rice - 2 cups, cooked
Preparation
Begin by slicing the pork belly into thin strips. It is essential to ensure that the pieces are uniform in size to promote even cooking. Next, cut the tofu into small cubes, roughly 1 inch on each side. This will allow the tofu to absorb the flavors adeptly without breaking apart during the cooking process.
Marinating
Create a marinade by combining the garlic, ginger, soy sauce, one tablespoon of gochujang, and sesame oil. Add the pork belly slices and mix well, ensuring each piece is generously coated. Let this marinate for at least 30 minutes to allow the flavors to penetrate the meat.
Prepping the Kimchi

Cooking Process
