Preparation
Step 1: Preparing the Sprouts
Sprouted Moong Beans: First, you need to sprout the moong beans. Soak 2 cups of moong beans in water overnight. Drain and tie them in a muslin cloth. Keep them in a warm place for 8-10 hours to allow sprouting.
Step 2: Cooking the Base
In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds and cumin seeds. Once they crackle, add 10-12 curry leaves. Add chopped onion and sauté until golden brown. Add chopped tomato, garlic, and ginger. Cook until the tomatoes turn soft.
Cooking Process
Add 1/2 teaspoon of turmeric powder, 1 tablespoon of Kashmiri red chilli powder and 2 tablespoons of Kolhapuri masala. Mix well and cook for 2 minutes.Sprouted Moong Beans: Add the sprouted beans into the pan and mix well. Add salt as per taste.Water: Pour water according to the consistency of the curry you desire. Bring it to a boil and simmer for 15-20 minutes or until the sprouts are thoroughly cooked. Use a cooking timer to keep track of the time. Remove from heat and let it rest for a few minutes before serving.
