Introduction to Koshari
Koshari is a beloved national dish of Egypt, renowned for its hearty and satisfying flavors. Originating in the 19th century, this popular street food combines a variety of ingredients, each with a unique historical background. Its roots trace back to the British occupation when the need for a cheap and filling meal was essential. Over time, Koshari has evolved into a culinary symbol of Egyptian culture, celebrated for its simple yet delightful combination of rice, macaroni, chickpeas, lentils, and topped with a spicy tomato sauce and crispy onions.
Ingredients
- Rice - 1 cup
- Macaroni - 1 cup
- Chickpeas - 1 cup (cooked)
- Lentils - 1 cup (brown or green)
- Onions - 2 large, thinly sliced
- Tomato sauce - 2 cups
- Garlic - 3 cloves, minced
- Vegetable oil - as needed
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Salt - to taste
- Black pepper - to taste
- Vinegar - 2 tbsp
- Red pepper flakes - optional, for extra heat
Preparation
Step 1: Prepare the Rice and Lentils
Rinse the rice under cold water until the water runs clear. In a large pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and all the water is absorbed. Meanwhile, rinse the lentils and place them in a separate pot with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 20-25 minutes, or until the lentils are cooked but still firm. Drain any excess water.
Step 2: Cook the Macaroni
In another pot, bring salted water to a boil and add the macaroni. Cook according to package instructions until al dente. Drain and set aside.
Step 3: Fry the Onions
Heat a generous amount of vegetable oil in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until golden brown and crispy. Use a slotted spoon to transfer the onions to a paper towel-lined plate to drain any excess oil.
Step 4: Prepare the Tomato Sauce
In a saucepan, heat a tablespoon of vegetable oil over medium heat. Add the minced garlic and sauté until fragrant. Add the tomato sauce, cumin, coriander, salt, and black pepper. Simmer for about 10 minutes, allowing the flavors to meld. Stir in the vinegar and adjust seasoning to taste. For an extra kick, add red pepper flakes.
Cooking Process
Step 5: Assemble the Koshari
In serving bowls, layer the ingredients starting with a base of rice, followed by a layer of lentils, and then the macaroni. Add a scoop of chickpeas, and generously ladle the spicy tomato sauce over the top. Complete each serving with a handful of crispy fried onions.
