Preparation
Before starting to cook, ensure all your ingredients like lion meat, red peppers, and others are prepped and within reach. Having everything ready ensures a smooth cooking experience.
Step 1: Marinade the Meat
In a large bowl, combine the lion meat with smoked paprika, cumin, cayenne pepper, black pepper, salt, olive oil, and lime juice. Mix well, cover, and allow it to marinate for at least 2 hours in the refrigerator for the flavors to infuse into the meat.
Step 2: Prepare the Pepper Mixture
Roast the red peppers on an open flame until they are charred. Peel away the blackened skin, remove the seeds, and chop them roughly. Set aside. In a sauté pan, heat some olive oil and add the onions and garlic. Cook until fragrant and soft, then add the chopped peppers. Stir in the tomato paste and continue to cook until the mixture is thickened and aromatic.
Cooking Process
Step 1: Sear the Meat
In a heavy-bottomed skillet or grill pan, heat olive oil until it shimmers. Add the marinated lion meat and sear each side until it's browned and much of its exterior has a caramelized finish, which should take about 3-4 minutes per side. Make sure your cooking timer is handy to keep track.
Step 2: Cook with Pepper Mixture
Add the pepper mixture to the seared lion meat. Lower the heat to a simmer and cover the pan, letting it cook gently for about 45 minutes or until the meat is tender and cooked through. Stir occasionally to prevent the mixture from sticking to the bottom.
Step 3: Finish with Olives and Honey
In the last 5 minutes of cooking, add the olives and drizzle honey over the top. This adds a depth of flavor and a slight sweetness to counterbalance the spice. Adjust seasoning if necessary.
Serving the Lion's Embers
Once ready, transfer the dish to a serving platter. Garnish with a scatter of cilantro for a fresh, herbal note. Serve hot with slices of bread to soak up the rich, fiery sauce.
