Lomo Saltado Eclipse
About the Dish
Lomo Saltado is a traditional Peruvian dish that blends elements of Chinese and Peruvian cuisines. Originating in the coastal regions of Peru, this dish has become a staple across the nation. The Eclipse variation of Lomo Saltado introduces additional spices and a unique marination process that enhances its rich flavors to a new level. This dish reflects the cultural fusion that characterizes much of Peruvian cuisine, rooted in the influence of Chinese immigrants during the 19th century who adapted their cooking techniques and flavors to local ingredients.
Ingredients
- Beef Sirloin - 500g, thinly sliced
- Soy Sauce - 4 tablespoons
- Red Wine Vinegar - 2 tablespoons
- Red Onion - 1 large, sliced into thick wedges
- Tomato - 2, sliced into wedges
- Russet Potatoes - 3, cut into thick fries
- Aji Amarillo Paste - 2 tablespoons
- Garlic - 3 cloves, minced
- Cilantro - a handful, chopped
- Vegetable Oil - for frying and stir-frying
- Salt and Pepper - to taste
- Pisco (optional alcohol) - 2 tablespoons
Preparation
Start by slicing the beef into thin strips. Marinate the beef in a mix of soy sauce, red wine vinegar, and two tablespoons of Pisco if desired. Let it rest for about 30 minutes.
While the beef marinates, prepare the potatoes by cutting them into thick fries. Heat oil in a deep pan and fry the potato fries until golden and crispy. Set aside on a paper towel to drain excess oil.
Cooking Process
In a large skillet or wok, heat a tablespoon of oil over high heat. Add the marinated beef and cook quickly, searing on all sides. Remove the beef from the pan and set aside.
In the same skillet, add another tablespoon of oil if necessary, and sauté the onion wedges until they begin to soften. Stir in the garlic and aji amarillo paste, cooking until fragrant.
Add the tomato wedges and quickly stir-fry, ensuring they do not become too soft.
Return the beef to the pan, combine with the vegetables, and adjust seasoning with salt and pepper to taste. Add the fried potato pieces and gently toss everything together.
Finish the dish with a sprinkling of chopped cilantro for freshness and color.
