- Tofu - 150 grams, firm
- Soy Sauce - 3 tablespoons
- Sesame Oil - 2 tablespoons
- Ginger - 1-inch piece, grated
- Garlic - 2 cloves, minced
- Spring Onion - 2 stalks, finely chopped
- Red Bell Pepper - 1 medium, sliced
- Green Chili - 1, finely sliced
- Carrot - 1 medium, julienned
- Cabbage - 100 grams, thinly sliced
- Salt - to taste

Preparation Steps
Begin by preparing the tofu. Cut the tofu into small cubes and pat dry using a paper towel to remove excess moisture. Marinate the tofu with 1 tablespoon of soy sauce and set aside for about 15 minutes to let the flavors infuse.
While the tofu is marinating, soak the rice noodles in a bowl of warm water for approximately 15 minutes until they become soft and pliable. Drain and set them aside.
In the meantime, prepare all the vegetables. Slice the lotus root, red bell pepper, carrot, and cabbage as described. Finely chop the spring onions, ginger, and garlic and keep them aside.
Cooking Instructions
Heat a wok or a large frying pan over medium heat and add a splash of cooking oil. Once hot, add the marinated tofu cubes and stir-fry until they are golden brown on all sides. Remove and set aside.
In the same wok, add another tablespoon of cooking oil and stir in the grated ginger and minced garlic. Sauté for about 30 seconds until they are fragrant.
Add the sliced lotus root to the wok and stir-fry for about 3 minutes until they start to become tender.
Next, add the red bell pepper, green chili, carrot, and cabbage. Stir-fry the vegetables for an additional 5-7 minutes until they become crisp-tender.
Add the softened rice noodles into the pan, followed by the browned tofu. Pour in the remaining soy sauce and sesame oil. Toss everything together to combine all the ingredients thoroughly and ensure the noodles are evenly coated with the sauce.
Season the mixture with salt and black pepper to taste, while continuing to stir-fry for another 2-3 minutes.
Finally, sprinkle the chopped spring onions over the noodles for added flavor and garnish with fresh coriander. Your Lotus Lavish Noodles are ready to be served.
